Save my Chipotle Chicken Sandwich recipe! I did the chopped sandwich trend for fun, but I recommend just making the sandwich for less mess. I sliced a chicken breast in butter, seasoned it with salt, garlic powder and paprika. Fried it in a little avocado oil for 3-4 minutes on each side until brown and set aside to cook. For the Chipotle Mayo I used 4 tablespoons of mayo and 1 tablespoon of smoked jarred chipotle peppers and mixed it together. Toasted sourdough, melted provolone cheese and added the chicken, lettuce, tomato, avocado, red onion, dried oregano and chipotle mayo. 00:35Save my Copy Cat recipe for Din Tai Fung Green Beans! Instead of flash frying the green beans in a bath of oil I made it healthier by air frying. The recipe is very simple. Ingredients: 1 pound of green beans, 5 cloves of garlic, 3 tbsps of vegetable oil, a pinch of salt and mushroom bullion powder. Instructions: coat green beans in 1 tbsp of oil and air fry at 375F for 7 minutes. In a pan heat 2 tbsps of oil on low and add minced garlic. Cook and stir until garlic turns light brown, pour out excess oil and toss in green beans. Season with salt and mushroom bullion. For National Spanish Paella Day, I wanted to learn how to make Paella with the help from my friend Christian from Mestizo Paella Here’s the recipe he typed up for us. Recipe for one person: - Olive oil: 2 tbsp - Salt to taste - Diced tomatoes: 2 tbsp - Diced bell peppers: 2 tbsp - Diced onions: 2 tbsp - Minced garlic: 1 tbsp (or to your hearts desire!) - Semi-sweet smoked paprika: 1 tsp - Saffron: 5 strands - White wine: splash - Vegetable broth: 1 1/4 cups - Bomba rice: 1/2 cup - Scallops: 3 oz - Clams: 2 oz (no shell) or 6 oz (in shell) - Shrimp: 4 shrimps 1. Heat oil in a pan over medium-high heat. 2. Add onions and cook for 2 minutes. 3. Add garlic and cook until fragrant. 4. Add tomatoes and bell peppers. 5. Cook the mixture down until most of the water has evaporated and it has thickened (approximately 15 minutes). 6. Sprinkle paprika into the soffrito and mix well. 7. Move the soffrito to the edges of the pan and add saffron strands or powder. 8. Use white wine to bloom the saffron and deglaze the pan. Cook for 2-3 minutes or until the wine has evaporated. 9. Add scallops into the soffrito and cook for 1-2 minutes. 10. Add broth and bring it to a smooth rolling boil. 11. Add rice and spread it evenly throughout the pan. 12. Let the rice cook for 10-12 minutes without stirring. 13. With about 5 minutes left, gently place shrimp on top of the rice and clams facing down into the rice. 14. Watch the rice as the water evaporates and the rice starts to peak out. 15. Once most of the rice is above the water line, turn the heat down to low. 16. Cook on low, undisturbed, for 10-15 minutes. 17. After 5 minutes of cooking on low, sprinkle peas and corn on top of the paella. 18. Observe the rice and check for liquid/bubbling at the edge and bottom of the pan. Check for soccarat on the bottom of the pan by gently poking it with the back of a spoon. If there’s resistance, soccarat has formed; if it’s easy to push through, cook for a little longer. 19. Let the paella rest for 5 minutes and enjoy! #paellarecipe #nationalspanishpaelladay

00:38Save my recipe for Pad Thai! My family loves any noodle dish and this is a perfect dinner for us. There’s actually a few steps to prep before cooking the Pad Thai. Like making the sauce, soaking the rice noodles and cooking the shrimp and tofu first. Ingredients: 1 pound of shrimp, 1 package of firm tofu, 1 package 14oz dried flat rice noodle, 2 shallots diced, 2 tbsp minced garlic, 2 eggs, a handful of bean sprouts, 1/2 cup sliced green onions 1/2 cup chopped peanuts and 7 tbsp avocado oil. Ingredients for the sauce: 2 tbsp tamarind paste, 1 tbsp fish sauce, 1 tbsp oyster sauce, 1/2 tbsp dark soy sauce and 2 tbsp of shaved palm sugar or 1 1/2 tbsp brown sugar. Instructions: Boil a pot of hot water, turn off heat and soak rice noodles for 10-15 minutes. Noodles should firm and partially cooked. Drain and set aside. Slice tofu into cubes and pat dry with paper towel. In a large pan heat 3 tbsp avocado oil to medium and cook tofu on each side for 3-4 minutes until golden. Remove from pan. Peel and divine shrimp and season with a little salt. In a large pan heat 2 tbsp of avocado oil to medium heat. Cook shrimp on each side 3-4 minutes or until fully cooked. Remove and set aside. Heat Wok or Large pan to low medium, add 2 tbsp avocado oil, shallots and garlic. Cook for 1-2 minutes and add soaked noodles to finish cooking. Pour in sauce until noodles absorb, scramble two eggs, add bean sprouts, green onions, cooked shrimp, tofu and top with peanuts. Serve with a lime wedges. #padthai #asianrecipes #noodlerecipes
00:41Save this recipe for Korean Japchae! It’s a great side dish with dinner and perfect to bring to potlucks. Start by boiling one bundle of the sweet potato starch noodles for 5-6 minutes. Drain, rinse under cold water and cut up with scissors. Next make the sauce which is 1/4 cup of soy sauce, 1/4 of sesame oil and 1 tbsp of brown sugar. The last part is a little tedious because you have to cut up all the vegetables and cook it individually. You can cook them all together to save time, but remember to add the spinach last because that cooks fast. I sprayed the pan with oil and I started with sliced onions, cooked for a few minutes, removed from pan, then spray oil again and the sliced shiitake mushrooms, repeated this process with bell peppers, carrots, spinach, garlic and green onions. 01:06Save my recipe for Seafood Noodle Soup so basically a Seafood Pho! The base is still chicken broth because it has more flavor in my opinion. When I make this every one’s bowl is different. I only like seafood in mind, the hubby has chicken and seafood and the girls only like chicken in their noodle soup. The ingredients are 3 chicken leg quarters of a whole chicken, large pot of water, two small onions, 2-3oz’s of ginger, 1 oz rock sugar, 1 tbsp fish sauce, 1 tsp salt ( I always adjust amount according to my taste preference with salt and fish sauce) and in my spice bag is fennel seeds, coriander seeds, Star anise, cinnamon stick and cardamom. Bring heat to high, cover with a lid, bring down to medium low and cook for 45 minutes. I sometimes will add a few more cups of water because some of it evaporates and when cooking. Cook rice noodles for 45 seconds and rinse under cold water immediately. Garnish with bean sprouts, cilantro, green onions, and a fresh squeeze of lemon or lime juice.
