Took me two days to shoot this… here is my Eight textures of imperial mandarin. Using the skin, flesh and juice in various ways. I left some components out as it would of been a very long video if I hadn’t done so. Cremeux, caramelised compote, granita, freeze dried, jelly, sorbet, dust and some lemon myrtle oil for fragrance.
