Aleppo pepper flakes or crushed red pepper flakes 4 sprigs thyme, leaves only, plus sprigs for serving 1¼ tsp. Diamond Crystal kosher salt, divided 8 oz. cream cheese, at room temperature ¾ cup mayonnaise ¾ cup sour cream 14oz. cheddar, divided (about 4 cups) 2, 14oz can white beans, drained and rinsed Freshly ground black pepper ½ cup panko Tortilla chips, for serving Radish, for serving Heat butter and olive oil in a large cast iron skillet over medium. Add onions, garlic, red pepper flakes, thyme leaves, and 1 tsp. Diamond crystal kosher salt and cook, stirring occasionally, until onions are golden and jammy, 15–20 minutes. Meanwhile, stir cream cheese, mayonnaise, and sour cream in a large bowl to combine (a few lumps are okay). Transfer onions to cream cheese mixture and add 3 cups cheddar; stir to combine.
