This is a Vietnamese meat loaf called Cha Dum. There's many different variations to this meat loaf. This is one of them. It mostly consists of chicken liver, gizzards, eggs, bean thread noodles, white coral fungus or wood ear mushrooms. Seasoned with salt, sugar, msg and pepper. It's then placed in a bowl lined with banana leaves with a egg yolk wash at the top for color before placing in a steamer to cook. Often eaten with the puffed shrimp/crab chips or just eaten with rice. A citrus like lime is usually paired with it. #vietnamesefood
