Sister's family came over and we wanted a quick simple dinner so decide to do a DYI gimbap night. These are not typical ingredients for traditional Korean gimbap but you can practically make gimbap with anything. We cooked up some very thinly sliced brisket (and sesame oil, salt, pepper dipping) and made canned tuna mix with mayo, salt and pepper. Other fillings we had: well fermented kimchi (rinsed with water and squeezed so it doesn’t overpower everything and rinsed kimchi has its own deliciousness in some foods), jalapeno pickles and cucumber pickles mom made and some perilla leaves. #koreanfood #gimbap #mukbang #kdrama
01:43Took mom and dad to the REAL Little Italy of New York, in the Bronx for lunch. We went to Mike's Deli in Arthur Avenue Retail Market for some Italian sandwiches. Then, went to Casa Della Mozzarella for the best Mozzarella in New York. Their Mozzarella was indeed so creamy and delicious. We tried "The Casa" (prosciutto, mozzarella, sun dried peppers, balsamic glaze on ciabatta bread) and “Burrata” (burrata, prosciutto, sun drie dpeppers, stracciatella, arugual, balsamic glaze). Then, headed to Cosenza's Fish Market to get some fish for dinner. 01:00Spring is finally here!!! And we are so excited to grill again with @Weber Grills. But first, we warmed up our Genesis grill with some griddle action with the Weber Full Griddle Insert. These bulgogi kimchi triple cheese quesadillas turned out so delicious! Recipe is below. #AD Bulgogi kimchi Triple Cheese Quesadilla Recipe Bulgogi (This is for quick bulgogi without marination. Also little less salty than usual bulgogi because of kimchi and cheese) 2 LB Your favorite cut of beef, thinly sliced (We used rib meat) 1 Medium Onion (sliced) - to be used when cooking bulgogi Seasoning 3/4 cups Soy sauce 3 TBS Sugar 4.5 TBS Sesame oil 4 TBS Garlic, minced Pinch Black pepper 1/3 Kiwi (optional. also can use Asian pear or Papaya) 3 Green onions, chopped 1. Mix all seasoning ingredients. 2. Mix seasoning with beef by gently massaging. (Cook within an hour. This recipe is for a quick bulgogi without marination) 3. Cook on med-high heat with a little bit oil. 4. Add sliced onions while sautéing. Kimchi Kimchi should be well fermented with a sour taste. Chop into small pieces and sauté with some butter on medium heat for 5-10 min. Quesadilla ingredients Flour tortilla Bulgogi, cooked Kimchi, cooked Jalapeno peppers (optional) Cheddar Monterey Jack Fresh Mozzarella Cooking oil Butter 1. Add cooking oil and butter on pre-heated griddle. (med heat) 2. Add tortilla and turn a few times so butter and oil is on the whole tortilla. 3. Add cheese, bulgogi, kimchi, jalapeños, and more cheese on half of tortilla. Close the tortilla. 4. Budae jjiage is the ultimate comfort food in Korea but it was born out of the Korean war, made from food waste smuggled out of the US amry base in Korea. Hence the interesting combination of Korean and American ingredients. It has a sad history but is also a reminder of our resilience and hardwork that enabled us to rebuild the country in a remarkably short time. For some reason, we were expecting trees full of leaves but spring hasn't fully come yet and it was quite chilly.
