Focaccia it’s an Italian staple and I added my own twist using Butterfly Pea Flower a.k.a the Blue Healer which is rich with antioxidants and is said to balance the nervous system. Ingredients: - 400ml water - 7g instant yeast - 1 tsp sugar - 1 tbsp butterfly pea flower powder - 4 tbsp olive oil - 2 tsp salt - 400g strong bread flour - Whole garlic cloves - Black olives, pitted - Fresh rosemary - Pickled red onions (optional) Instructions: - In a large mixing bowl, combine water, yeast, and sugar. - Let it sit for 5 minutes until foamy. - Stir in pea flower powder, olive oil, and salt and use a squeeze of lemon to turn the colour from blue to purple. - Gradually add flour, mixing until combined but do not overwork. - Cover the bowl with a wax wrapping cloth and let the dough proof for 30 minutes. - After the first proof, fold the dough from four corners towards the middle. Let it proof for another 30 minutes. Use olive oil on your hands to prevent sticking. - After the second proof, knead the dough on a surface to create a round shape like a bread loaf. Place it in a greased baking pan, cover, and refrigerate overnight. - The next day, take the dough out of the fridge and let it come to room temperature. Allow it to proof until doubled in size. - Preheat the oven to 250°C (480°F). - Drizzle olive oil over the dough and scatter whole garlic cloves, black olives, and fresh rosemary on top. - Use your fingers to press the dough and create some holes for the olive oil to penetrate it. - Bake in the preheated oven for 20-25 minutes until golden brown and cooked through. - Remove from the oven and top with pickled red onions.
