Here’s how I did on my first final exam of culinary school! We have been prepping and getting ready for these exams for a few lesson now, and our first of two exams is all about making a dish starting with a whole fish and a set list of ingredients. I wanted to do something fun but also complicated to challenge myself and I definitely had a lot of components and different things to focus on while I was making this dish. I also wanted to make an effort to stay as clean and organized as possible throughout the exam and I ended up making something that I am really proud of taste wise, but not so much conceptually and visually. In hindsight I should have had three pieces of the mosaic on the plate each individually garnished and with contrasting colors (my idea was to have it monochromatic, but it ended up being too much) but still I had a lot of fun winging all of the recipes and making this dish come together in just a couple of hours. I really can’t believe that there is only one more lesson to share with you all, it really is just the beginning of our culinary journeys together, and there is so so so much more I am excited to share with you. 01:00Final exam time! wanted to try something fun for one of my final exams so here’s a POV view of me going through my test. This test was a 2 hour practical where we had to filet and skin a flounder than use it with 2 other vegetables, 1 sauce, 1 starch, and garnish and present to our chef for grading. I had lots of fun pushing myself for this exam and really trying not to be too messy (even though I was hahaha). This was a thai inspired green curry with a flounder and nori mosaic, topped with a basil emulsion, thai fried basil, basil oil, on a bed of rice with pickled zucchini and broccoli stem. 01:30More culinary techniques and here we have the chiffonade! Super simple but effective way to cut up your herbs instead of chopping them which gives you long stringy/ribbons that can go into sauces, soups, or fresh on top of anything. With any herb just pick a few leaves, stack them on each other, roll them up so they become easy to cut, and slice away. Another thing I forgot to mention is while cutting herbs you should really try to slice with a forward motion instead of just chop up and down because when you chop you damage the herb and crush it which isn’t what you want. 00:37Final written exam! But not really hahaha. This was the last day before our practical exams where we took our written exam for a bit of the class and then were given the rest of the time to practice making vegetables and sauces for our final. A lot of people in class were hungry and didn’t really feel like making a mess of pots and pans because we didn’t have too much time, so me and a friend just decided to make some food for everyone. 00:37Here’s a fun and easy culinary technique to make scallion curls! these are a great garnish for any dish you are making at home and look great too (Iwould suggest letting them curl longer than I did, I was in a rush hahaha). Just separate the tops from the bottoms, split and scrape put any goo, cut, stack, slice, and throw them in ice water to curl! Just wanted to mention again how the skills videos I share might not be 100% applicable for a lot of home cooking, I just share them because they’re all still interesting (or at least I hope so) or valuable to know! 00:45day 103 @iceculinary is more advanced plating! this day we just all prepped a few components for each dish and then had full creative freedom to plate however we wanted. it was a very relaxed but fun day and I wanted to experiment with some other concepts of plating today. asymmetrical plating particularly focuses on the negative space on the plate to bring more visual appeal to the ingredients and flow of the dish, while the linear plating I attempted has more structure. overall not too bad especially with a limited set of ingredients but still definitely need tons of practice. very simple days winding down to the end of class, hope you’re excited for the last few days!
