Mushroom & Walnut Cottage Pie 🤤 this meat-free version will surprise you! This is episode 1 of “Perfect Pies” 🥳. I tweaked my viral bolognese recipe to make it pie friendly too! Makes 4 portions: ▪️200g mushrooms, quartered ▪️100g walnuts ▪️1 red onion, quartered ▪️1 carrot, chopped ▪️2 garlic cloves ▪️1 tsp Italian seasoning ▪️1 tsp dried basil ▪️1 tsp dried oregano ▪️1 can chopped tomatoes ▪️1 cup frozen peas (100g) ▪️1 tbsp yeast extract (or marmite if you’re not gluten-free) ▪️1kg white potatoes, peeled ▪️knob of butter (I used vegan) ▪️75ml milk (I used almond) ▪️salt & pepper 1️⃣ Firstly, add the mushrooms + walnuts + onion + carrot + garlic to a food processor and pulse (don’t over blend) as you want texture. 2️⃣ Heat a pan with oil and add in the mince along with the dried herbs and fry for a few minutes. 3️⃣ Now add the chopped tomatoes + peas + yeast extract/marmite + pinch salt + pepper and simmer with the lid on for 10-15 minutes. 4️⃣ Meanwhile, peel and chop your potatoes and boil for 10 minutes until soft. Drain, add the butter + milk + pinch salt & pepper and mash until smooth. 5️⃣ Finally, transfer the mince into a large baking dish, top with the mash and press it down. Drizzle over a little oil and bake at 200C for 30 minutes.
