Mushroom Stroganoff Pie 🍄 episode 3 of “Perfect Pies” is this show stopper that you NEED to try! Serves 4 ▪️500g mushrooms (I used chestnut) ▪️1 red onion, diced ▪️1 tsp dijon mustard ▪️2 garlic cloves, crushed ▪️handful fresh parsley ▪️250ml cream (I used soya to be dairy free) ▪️1/2 juice lemon ▪️1 puff pastry sheet (I used gluten-free) 1️⃣Firstly, roughly chop the mushrooms and finely dice the onion. 2️⃣Heat a large non stick pan with olive oil and add in the onion and fry until it softens (3 minutes) 3️⃣Now add in the mushrooms and fry until they soften (5 minutes) 4️⃣Add in the mustard, crushed garlic, parsley, cream, lemon juice, generous pinch of salt and pepper and stir. Simmer for 10 minutes until the sauce thickens 5️⃣Pour the mushroom sauce into a baking dish and top with the puff pastry (crimp in the edges) glaze with olive oil and bake at 200C for 20-25 minutes until golden and crispy
