Baby Potatoes with Whipped Feta Ingredients: • 500g baby potatoes, halved • Handful of baby carrots • 2 tbsp unsalted butter • 2 tbsp olive oil (divided) • Salt and pepper to taste • 1 tbsp paprika • Bunch of thyme (small) • 1 garlic bulb (top cut off) • 200g feta cheese • 100ml double cream • Juice of 1 lemon • Bunch of dill, chopped (divided) Method: 1. Place the potatoes and carrots in a bowl, add salt, pour boiling water over them, cover, and let sit for 10 minutes, then drain well. 2. Preheat the oven to 200°C (fan) and place a baking tray inside to heat up. 3. Add butter and 1 tablespoon of olive oil to the baking tray, then add the drained potatoes and carrots, season with salt, pepper, and paprika, and place the thyme springs on top. Mix well and add the garlic bulb (cut side down) to the tray. 4. Roast for 25-30 minutes or until the potatoes are cooked through and crispy, flipping them halfway through. 5. Meanwhile, blend together the feta, double cream, squeezed garlic, lemon juice, remaining olive oil, and most of the chopped dill until smooth. 6. Spoon the whipped feta onto a serving platter, arrange the roasted potatoes on top, and garnish with the remaining chopped dill. Enjoy! #potato #cheese #cooking #snack

Preheat the oven to 200°C (fan). 2. Place peppers on a baking tray lined with parchment and drizzle them with 1 tbsp olive oil. Roast for about 40 minutes, flipping halfway through. 3. When ready, place them in a bowl and cover with a lid or cling film, allowing them to cool. Then peel and deseed. 4. Place the roasted peppers in a food processor along with all remaining ingredients and process until smooth. (Alternatively, place in a bowl and use an immersion blender to blend.) 5. In a bowl, combine all dry ingredients and mix well. Add water, milk, and olive oil, then mix until thoroughly combined. Cover and allow the mixture to rise in a warm place for 30 minutes. 2. Once the dough has risen, lightly grease your hands and working surface with oil. Transfer the dough onto the working surface and shape it into a ball. Divide the dough into 4 equal parts and shape each into a ball. 3. Place two dough balls onto a baking tray lined with parchment paper, leaving enough space between them. Cover with greased cling film and let them rise for 20 minutes. 4. Prepare the egg wash by combining all the ingredients. Preheat the oven to 200°C and place an empty tray on the bottom shelf. 5. Brush each dough ball with the egg wash and flatten them into disks using your hands. Create indentations in the dough about 2cm from the edge to form a circle, then make vertical and diagonal indentations to create a diamond pattern. Cover with cling film and let it rest for 15 minutes. 6. Brush the dough with the egg yolk once more and repeat the indentations. Sprinkle sesame seeds and nigella seeds on top, then place the tray in the oven. Add a cup of boiling water to the empty tray on the bottom shelf and bake for approximately 20 minutes or until golden brown. 7. Repeat the process with the remaining dough and enjoy with your favorite dip! #pide #bread #baking #food

Place the slices back on the parchment-lined tray, lay them flat, and bake for 10 minutes on one side. Flip and bake for an additional 10 minutes until they turn golden brown and crisp. 10. Heat the oil in a frying pan and add your ground chicken; season with salt and pepper, cooking until browned. 2. Add shallots and garlic, cook for 2 minutes, then add spinach and mix. Cook until spinach is wilted, and there is no liquid in the pan. 3. Transfer the mixture to a bowl, stir in feta, thyme leaves, and coriander. Set aside. 4. For each strudel, place 1 phyllo sheet on the working surface, and generously brush it with melted butter. Repeat to create a total of 5 layers. 5. Spread half of the filling over the top sheet of phyllo, leaving about 2 cm empty around the edges and about 5 cm from the other end of the dough. Roll tightly starting on the long side, folding in the edges to form a log. Repeat with the second one. 6. Transfer the strudel onto a baking sheet covered with parchment, seam side down, and brush with more melted butter on top. 7. Bake at 190°C for about 30-35 minutes or until golden. 8. Sprinkle the remaining nuts on top, followed by salt flakes, and bake at 180°C for 40-45 minutes or until a toothpick inserted comes out dry. 8. Notably, most fruit from South Africa are shipped, not flown, contributing significantly to reducing the industry’s carbon footprint. *Makes you feel even better eating it, don’t you think? 🤩 Recipe Ingredients: • 2 South African plums • 2 slices white bread (crustless) • 300ml milk • 1 tbsp olive oil • 1 tbsp butter • 1 onion, chopped • 3 bay leaves • 1 tsp turmeric • 2 tsp curry powder • 1 tsp oregano • 1 tsp cumin • 1/3 tsp ground cloves • Salt to taste • Pepper to taste • 1 tsp ginger paste • 2 garlic cloves, minced • 600g minced beef • 150g tomato puree • 1 tbsp fruit chutney • 1 tbsp Worcestershire sauce • 2 eggs • Bay leaves for garnish Method: 1. Halve the plums, discard the pits, slice and dice. Set aside. 2. Soak the bread in milk and preheat the oven to 190°C. 3. Heat the oil and butter in a large pan, add onions, and cook until softened. 4. Add bay leaves, all spices, and mix well. Then, add garlic and ginger, cook for 2 minutes, and incorporate minced beef. Mix well and add drained bread, tomato puree, chutney, plums, and Worcestershire sauce. Ensure a thorough mix and cook until the mince is fully cooked, and no liquid remains in the pan. 5. Once ready, transfer the meat to a baking dish. Whisk the eggs into the remaining milk, and pour the mixture over the mince. 6. Soak rice paper in water, transfer it onto the working surface, and cut it in half. Add filling to each half (about 1 tbsp) and fold as shown in the video. Repeat with the remaining rice paper and filling. Spray the air fryer basket with cooking spray and arrange the salmon parcels. Spray the top with cooking spray. Air fry for 10-12 minutes at 200°C.
